Rhubarb upside down cake
3 cups rhubarb ( 1 inch pieces )
3/4 cup sugar
Batter
1/2 cup of butter
1 cup sugar
2 eggs
1 3/4 sup flour
3 tsp. baking powder
1/2 cup milk
Wash rhubarb and cut into pieces. Put into bottom of large skillet ( I use my cast iron but a 8 inch round or square pan works too ) which has been greased. Add the 3/4 cup of sugar over top. Spread batter over top and bake at 350 degrees for about 1 hour. Cool five minutes and turn out onto large plate. Serve warm with whipped cream or ice cream.
